3 large eggs
1/2 teaspoon salt
1 tablespoon olive oil (optional)
Step 1: Making the Dough
1. Make A Well: On a clean countertop, pour the flour to form a mound shape and make a sizeable well in the center. Pour the salt, eggs, and olive oil into this well.
2. Mix: Then knife-stir the mixture without making a mess with the yolks. A fork went round the edges and broke the yolk. Sticking to the edges, flour from the sides went in until a sick dough was up.
3. Knead: When everything is joined, begin kneading the dough by hand for about 8-10 minutes until it is smooth and elastic. If the mixture is too wet add a little more flour as required.
4. Rest the Dough: Once kneaded, cover the dough with a plastic wrap and place it in a rest for about thirty minutes in room temperature. The purpose is to allow gluten to relax hence easy with rolling.
